Canned Mango Production Line Core Process Flow

Raw material screening: select mangoes with moderate maturity (8-9 ripeness), no pests and diseases, and no mechanical damage

Cleaning and surface treatment: Bubble cleaning to remove surface sand and impurities. Use food-grade sodium hypochlorite solution for soaking and sterilization.

Peeling and core removal: Use a mango peeling machine to reduce pulp loss.

Color protection and pretreatment: 85-90℃ hot water treatment for 1-2 minutes to kill enzymes and soften tissues.

Filling and soup preparation: Fill the pulp according to specifications, inject sugar water (sugar content 15-20%) or juice.

Vacuum canning: exclude oxygen and extend shelf life.

Sterilization and cooling: Use a sterilizer, 100-121℃ for 10-30 minutes (adjusted according to the can type).

Rapid cooling: Spray cold water to cool down to below 40℃ to prevent excessive heat from affecting the taste.

Packaging and quality inspection: The automatic labeling machine marks the production date and batch.
