After the mangoes are quickly frozen, they are heated in a vacuum (lower than the triple point pressure of water) to analyze the water in the mangoes, and then use the water catcher to store the water in ice, and keep the mango silo in a dry state until all the water in the mango is separated out to achieve the purpose of removing water by vacuum freeze-drying.

The shape is basically unchanged. Since it directly converts moisture from solid to gaseous state, the food structure does not change, but the space occupied by ice crystals forms voids.
The color is basically unchanged. Because the drying is carried out under low temperature and poor nutrient conditions, the physical and chemical properties of mango have little change, mainly the reactivity to visible light has no major change after rehydration. The possibility of oxidation and enzymatic change is very small, so the original color of mango is easy to maintain.
The fragrance is basically unchanged. Because the fragrant ingredients in mango remain in the amorphous concentrated part in a large amount during the freezing process, when the ice crystals vaporize, the aroma will not escape with it.
The quality of solid matter is basically not lost. Since the moving speed of the sublimated water vapor is very small, the object is basically in a static state, and the mass loss of the solid object is negligible.
Excellent rehydration, easy to eat. Since the water leaves a lot of pores after drying, the rehydration is good, reaching more than 95%, and the rehydration speed can be completed in a few seconds to tens of seconds.
It is easy to store and has a long shelf life. Due to the high dehydration rate, no preservatives are required, and it has an extremely long shelf life at room temperature. If well packaged, the shelf life can exceed five years. The product is light in weight, does not require a cold chain for storage, is convenient for storage and transportation, and has low recurring costs.
